The preparation begins by soaking basmati rice and then cooking it until it is about 70% done. In a separate pot, a mix of vegetables like carrots, peas, potatoes, green beans, and cauliflower is sautéed with onions, garlic, ginger, and green chilies. A blend of spices including cumin, coriander, turmeric, garam masala, and biryani masala is added to enhance the flavor. Layers of the semi-cooked rice and the spiced vegetables are then alternately placed in a large pot, with saffron-infused milk or food coloring drizzled over the top layer to give the dish its characteristic color and aroma. The pot is then sealed and cooked on low heat, allowing the flavors to meld together. Garnished with fresh cilantro, mint leaves, and fried onions, Vegetable Biryani is a hearty and aromatic dish that is often served with raita, a yogurt-based side dish, or a simple salad, making it a complete and satisfying meal.
